Wasted! The Story of Food Waste | A Night of Film, Food, and Real Talk on Sustainability

Few events have brought together my passion for storytelling, community, and food systems change quite like the Earth Day screening of Wasted! The Story of Food Waste at The Huntington Library in Los Angeles.

I had the honor of MC’ing the official screening of this impactful documentary, which explores the global issue of food waste through the lens of chefs like Anthony Bourdain, Dan Barber, Massimo Bottura, Mario Batali, and Danny Bowien—all pushing for a more just, sustainable food future by transforming "scraps" into high-impact meals.

After the film, I had the privilege of moderating a panel discussion with four of LA’s most inspiring culinary voices—Nyesha Arrington (Celebrity TV Chef), Minh Phan (Porridge + Puffs), Neil Fraser (Redbird), and Michael Cimarusti (Providence)—each bringing their unique perspective on how chefs can tackle food waste in their kitchens and communities.

Following the panel, we welcomed guests to a tasting event that put the film’s message into practice. Dishes were crafted by chefs and collaborators who are all committed to making food waste a thing of the past. Think: underutilized ingredients, nose-to-tail cooking, and full-flavor stewardship.

I proudly repped Preux & Proper, collaborating with Javier Ascencio on dishes that honored the idea that "trash" food can be treasure—when cooked with intention. My partner Kassady Wiggins created a cocktail lineup that featured rescued ingredients and thoughtful sourcing, while bartenders like Matthew Biancaniello and the team at VaLa Hospitality added even more depth to the experience.

The event was co-hosted by Bon Appétit Management Company, LA Kitchen, and Chefs Collaborative, each with a mission to educate eaters, reduce waste, and empower communities through food.

WASTED! isn’t just a film—it’s a call to action. One that reminds us that climate change, food insecurity, and sustainability are deeply connected, and that chefs have the power to lead the way.
