Algae-Fed Salmon Takes Center Plate at Seafood Expo North America

At the 2019 Seafood Expo North America (SENA) in Boston, I had the honor of serving as a Headlining Chef Presenter for the continent’s largest seafood industry event. This platform gave me the chance to cook for—and connect with—some of the most influential voices in global seafood, from fisheries experts and aquaculture scientists to chefs, buyers, and sustainability advocates.

During my live cooking demo, I prepared Coho Salmon bites that showcased the remarkable potential of AlgaPrime DHA, a fermentation-based algae feed that helps reduce aquaculture’s reliance on wild fish for Omega-3s. It’s one of the most exciting feed innovations I’ve encountered—proof that we can shift toward a more sustainable seafood future without compromising flavor, nutrition, or environmental integrity.

I also debuted a short documentary chronicling my journey to Chile, where I witnessed firsthand how this next-gen algae feed is being implemented in responsible salmon farming. This experience deepened my commitment to climate-forward aquaculture and reinforced the idea that chefs have a unique role to play in shaping demand for environmentally sound food systems.
