Vegan Avocado Green Goddess

 VEGAN AVOCADO

GREEN GODDESS

INGREDIENTS

(Yield: Approx. 2 Cups)

1 Ripe Avocado, Skin and Pit Removed

1 Cup Plain Vegan Yogurt (I prefer Kite Hill Greek Style)

1 Lemon, Juice and Zest

1/4 Cup Parsley, Rough Chopped

1/4 Cup Cilantro, Rough Chopped

1/4 Cup Dill, Rough Chopped

1/4 Cup Basil, Rough Chopped

1 Garlic Clove, Minced

Kosher Salt & Black Pepper to taste

METHOD

Place all ingredients in food processor and puree until smooth. Season to taste with salt and pepper. I typically season with approx 2 teaspoons kosher salt and 2 teaspoons black pepper, but everyone’s tastes are different. Refrigerate in an airtight container, like a mason jar, for up to one week. Not only does this make a great dressing for your salads, but it is also a superb accoutrement for chicken, meat and fish. Try some slathered on your next piece of grilled Dutch Yellowtail for a real treat!
